My Go-To Air Fryer Potato Recipe

When it comes to crispy, crunchy potatoes, nothing quite compares to Air Fryer Potatoes! From an air fryer baked potato to air fryer fries to air fryer potato wedges, to these air fryer potato cubes, the air fryer delivers potatoes with the crispiest of exteriors and a pillowy soft interior.
And while we love any and all versions of air fryer potatoes, these air fryer potato cubes are my go-to easy air fryer recipe for several reasons!
- Healthier Alternative. The air fryer delivers potato cubes that have the same crispy texture as deep-fried potatoes, yet are MUCH lower in fat and calories.
- Endlessly Versatile. Not only does this recipe work with nearly any variety of potato and seasonings of your choice, air fryer potato cubes are more than just an irresistible side dish. They are fabulous added to a breakfast burrito, atop a salad, or even as a base for a casserole.
- Budget-Friendly. Simple, inexpensive ingredients come together with minimal prep to deliver big flavor!
- Family-Favorite. Even the picky eaters gobble up them up!

Notes on Ingredients and Equipment

- Potatoes: This recipe works with russet potatoes, Yukon gold potatoes, baby potatoes, purple potatoes, or red potatoes. If you would like to use sweet potatoes, be sure to check out my recipe for Air Fryer Sweet Potatoes.
- Oil: I recommend using a small amount of extra virgin olive oil, canola oil, or avocado oil or generously spraying the potatoes with your favorite cooking spray.
- Seasonings: Salt is the only needed seasoning, but I like to add paprika, garlic powder, and onion powder for additional flavor, which mimics the flavors found in my recipe for homemade seasoned salt. Feel free to season the way you like!
How to Make Air Fryer Potato Cubes
The following tips are provided to help you achieve perfect results. You will find the ingredient quantities and detailed instructions in the recipe card at the bottom of this post.
- Prepare Potatoes. Wash, dry, and cube the potatoes into evenly sized cubes. Then toss the diced potatoes with oil and seasonings of choice.

- Add to Air Fryer. Spread the seasoned potatoes evenly into the air fryer basket OR the trays of the air fryer. It is okay if the potatoes overlap slightly, but you don't want to fill your basket more than 2 layers deep with potato cubes.
Work in Batches if needed
If your air fryer is a smaller model, you will need to either cut this recipe in half or air fry your potatoes in two batches to prevent overcrowding the air fryer. An overcrowded basket equals uneven air-frying.

- Air Fry. If using an air fryer with trays, cook for 18-22 minutes-there is no need to flip potatoes. If using an air fryer with a basket, cook for 10 minutes, remove the basket, and give the potatoes a good shake, and continue to air fry for an additional 8-12 minutes until crispy.

Serving Suggestions
Air Fryer Potatoes pair perfectly with any meal from breakfast to lunch to dinner. They even can be used to create casseroles or as a filling in burritos. Below are a few of my family's favorite ways to serve up these crispy potatoes.
- As a family-favorite side dish: Air Fryer Diced Potatoes pair especially well with Homemade Chicken Tenders, Sloppy Joes, and Burgers--just don't forget the ketchup or ranch dressing for dipping!😉
- For breakfast: Add these crispy potatoes to a breakfast burrito or serve with scrambled eggs and breakfast sausage for a delicious, hearty breakfast.
- In place of the frozen hash browns or cubed roasted potatoes: , use these air-fried potatoes to make hashbrown breakfast casserole, Instant Pot breakfast casserole, or potato frittata.
- As a salad topper: I LOVE topping salads (especially a buffalo chicken salad) with air fryer diced potatoes! Better than croutons!

Seasoning Variations for Air Fryer Potatoes
The options for seasoning Air Fryer Diced Potatoes are endless. Below are a few of my favorite flavor variations.
- Greek Potatoes: Season potatoes with 2 teaspoons of Greek seasoning and air-fry as directed. Finish with the zest of a lemon for a pop of bright flavor.
- Add Parmesan: Grate fresh parmesan cheese over the air fried potatoes right before serving.
- Ranch Flavored Potatoes: Season the potatoes with 2 teaspoons of Ranch Seasoning and serve with a side of ranch or sour cream for dipping.
- Taco Flavored Potatoes: Use 2 teaspoons of Taco Seasoning to flavor the potatoes prior to air-frying them. Delicious as a side or in a bean burrito.
- Onion Potatoes: Season with potatoes with 2 teaspoons of Copycat Lipton Onion Soup Mix before air frying.
- Cajun Spiced Potatoes: Give these potatoes a kick by seasoning with 2 teaspoons of Homemade Cajun Seasoning.
- Chili Seasoned Potatoes: Season the potatoes with 2 teaspoons of chili seasoning. So good!
- Low-Sodium/Salt-Free Potatoes: Cut the salt to ¼ teaspoon OR omit completely if on a salt-free diet.
- Latin-American Spin: Use Adobo Seasoning to give the potatoes an earthy, zesty spin.

Ingredients
- 4 medium potatoes, russet, yukon gold, or red potatoes (~4 cups diced potatoes)
- ½ teaspoon oil, extra virgin olive oil, canola oil, or avocado oil
- ½ teaspoon kosher salt
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
- If needed, preheat the Air Fryer to 400℉ (205℃). It should only take about 5 minutes to be ready.
- There is no need to peel potatoes, simple scrub the potatoes and let them dry. Once dry, dice the potatoes into ¾ to 1-inch sized cubes.
- In a large mixing bowl, toss the diced potatoes with ½ teaspoon oil, ½ teaspoon kosher salt, ½ teaspoon paprika, ½ teaspoon garlic powder, and ½ teaspoon onion powder.

- Spread the cubed potatoes out evenly in the basket or trays of the air fryer. It is okay if they overlap slightly, but if needed work in batches so that the potatoes all get crispy and golden.

- Air Fry for 10 minutes at 400℉ (205℃) and remove the basket and give the potatoes a good shake so that they evenly cook. Return the basket to the air fryer and cook for an additional 8-12 minutes, or until golden and crispy.If your Air Fryer uses a tray and not a basket, there is no need to stop the cooking process to shake the potatoes.

- Serve as desired.

I will definitely be trying this recipe. Just wanted to mention that you might want to add the oil to the actual recipe instructions. You mention adding the oil with the seasonings in your description but when you jump to the recipe, there is no mention of what to do with the oil
