Air Fryer Potato Wedges have an irresistible seasoned, crispy exterior, yet are fluffy on the inside. These crispy potato wedges also happen to be one of the easiest, tastiest potato side dishes ever!
It is no secret that I love potatoes, nor have I shied away from sharing with you my love for Air Fryer Potato Recipes! From crispy cubed air-fried potatoes to air-fried baked potatoes to air-fried French fries, it is almost like the air fryer was designed just for cooking potatoes!
Clearly, my collection of air fryer recipes prove otherwise. But using the air fryer to make crispy, fluffy potatoes without excess fat or oil just makes sense.
And my latest recipe for Air Fryer Potato Wedges has quickly become a favorite! Similar to a Jojo potato, air fryer potato wedges are coated with a ridiculously delicious seasoning blend and then air-fried until the exterior is ultra crispy, yet the inside is melt-in-your-mouth fluffy. Potato wedges are are like French fries, yet bigger AND better!
Reasons to Love Air Fryer Potato Wedges

- Better for You. This recipe uses very little oil, unlike deep-fried potato wedges. Yet this recipe doesn't sacrifice any flavor.
- Quick and Easy Recipe. It takes less than 10 minutes of hands-on prep to wash, cut, and season the potatoes and the air fryer cooks them up to crispy perfection in under 20 minutes.
- Customizable. You can change up the seasonings for your potato wedges however you like. The options are endless.
Notes on Ingredients & Equipment
- Russet Potatoes: Russet potatoes are a must when making homemade potato wedges! They have a high starch and low moisture content, which will yield a crispy potato wedge with a fluffy interior!
- Oil: A small amount of oil is recommended for this recipe, as it will help the seasonings stick and allows the potato wedges to become super crispy. I recommend using extra virgin olive oil for the best flavor, but canola oil, vegetable oil, or avocado oil can be substituted. I also use a bit of cooking spray to coat the basket as well just to ensure that the potato wedges don't stick to the air fryer.
- Flour: Coating the potato wedges in flour may seem like an odd addition, but the flour helps to achieve a super crispy exterior.
- Parmesan Cheese: For this recipe, use finely grated parmesan cheese for a cheesy, salty touch.
- Seasonings: Kosher salt, pepper, garlic powder, and paprika work to give these potato wedges a restaurant-quality result.
- Air Fryer: There are so many brands of air fryers on the market and each is vastly different, but all will work well with this recipe. I personally love the Ninja and Aria air fryer.
Seasoning Variations
- Gluten-Free/Flour-Free: Use a 1:1 gluten-free flour blend. Or omit the flour altogether, the potato wedges will still be delicious!
- Dairy-Free: Omit the parmesan from the seasoning blend and increase the salt by ¼ teaspoon.
- Ranch-Flavored: Season the potato wedges with 1 tablespoon of store-bought or Homemade Ranch Seasoning, along with the oil and flour before air frying.
- Taco-Flavored: Season the wedges with 1 tablespoon of Taco Seasoning, along with the oil and flour before air frying.
- Savory Onion-Flavored: Toss the potatoes with 3 teaspoons of Copycat Lipton Onion Soup Mix, along with the oil and flour before air frying.
- Cajun Spiced Potatoes: Toss potatoes 1 tablespoon of Homemade Cajun Seasoning along with the oil and flour before air frying.
- Use Seasoned Salt: Replace the salt, paprika, garlic powder, and pepper with 2 teaspoons of seasoned salt.
- Low-Sodium/Salt-Free: Cut the salt to ¼ teaspoon OR omit completely if on a salt-free diet.
How To Make Air Fryer Potato Wedges
The following tips are provided to help you achieve perfect results. You will find the detailed instructions in the recipe card at the bottom of this post.
- Prepare Potatoes. Scrub and dry the potatoes well. There is no need to peel the potatoes when making potato wedges, simply cut them into thick wedges.
- Season Potato Wedges. Place your potato wedges into a large mixing bowl or storage bag. Toss the potatoes with flour, oil, parmesan, oil and seasonings until each potato wedge is evenly coated with the mixture. I find it is easiest to use a storage bag for this--and it makes for easy clean-up as well.
- Air-Fry Potato Wedges. In order for your potato wedges to get crispy and cook evenly, it is best to lay your seasoned potato into an even layer in your air fryer basket or tray, ensuring they don't overlap. Air fry for 10 minutes, flip and continue to air fry until crispy and cooked through. Work in batches if needed.
Potato wedges not getting crispy? Flipping them too early or over-crowding the pan will leave you with less than crispy potato wedges.
No Air Fryer? Bake the Potato Wedges
If you don't happen to have an air fryer, you can still make homemade crispy potato wedges using the oven. Season the potatoes as directed. Bake an a greased rimmed baking sheet at 400 degrees F for 15 minutes, flip and continue to bake for 10-15 minutes or the potato wedges are crispy and golden.
Serving Suggestions
These seasoned potato wedges are so flavorful, they really don't need to be paired with a dipping sauce, but they do pair well with ketchup or ranch dressing if desired They make a delicious appetizer or side dish to endless meals. Below are a few of my favorite pairings.
- BBQ: Potato wedges are a delicious option for any BBQ and go well with Grilled BBQ Chicken Breasts, Crockpot BBQ Chicken Thighs, Crockpot BBQ Chicken Legs, Crockpot Pulled Pork or Instant Pot Pulled Pork.
- Sandwiches/Wraps: Replace standard potato chips with these potato wedges when serving sandwiches or wraps like Turkey Bacon Wraps, Avocado Chickpea Salad Sandwiches, Chicken Salad Sandwiches, Egg Salad Sandwiches, Instant Pot French Dip Sandwiches, and/or Sloppy Joes.
- As a Side: These potato wedges also pair well as a side for entrees like Bacon-Wrapped Pork Tenderloin, Homemade Fish Sticks, or Instant Pot Chicken Thighs.
Storage & Reheating Instructions
- Refrigerate: Allow the potato wedges to cool fully and then place in an airtight container in the refrigerator for up to 4 days.
- Reheat: To keep the potato wedges crispy, reheat them in the air fryer at 350 degrees F for 4-5 minutes for, flipping the potatoes after 2 minutes.

Air Fryer Potato Wedges
Ingredients
- cooking spray
- 2 large russet potatoes
- 2 teaspoons extra virgin olive oil or canola or avocado oil
- 2 tablespoons all-purpose flour
- 1 tablespoon grated parmesan cheese
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon pepper
Instructions
- Lightly spray the air fryer basket with cooking spray and if needed per your model, preheat to 400℉.
- Scrub and dry the potatoes well. Cut the potatoes in half lengthwise, and then in half again lengthwise. Cut each quarter into thick potato wedges that are about ½-inch thick.
- Place the potato wedges into a mixing bowl or storage bag and add 2 teaspoons of oil, 2 tablespoons of flour, 1 tablespoon of parmesan, 1 teaspoon kosher salt, 1 teaspoon garlic powder, ½ teaspoon paprika, and ½ teaspoon pepper. Toss or stir to evenly coat the potato wedges in the seasonings.
- Place the seasoned potato wedges in the prepared air fryer, in an even layer. Do not overlap the potatoes, or they will not become crispy or evenly cooked.
- Air fry at 400℉ for 10 minutes. Remove the tray or basket, flip the potatoes, and then continue to air fry for 8-10 minutes, or until your potato wedges are golden and crispy.
- Remove the air-fried potato wedges from the air fryer and if needed repeat the process, keeping the prepared potatoes warm in a 225℉ oven.
- Serve the potato wedges warm with with ketchup, ranch dressing, or plain.
