Looking for an easy recipe that allows tilapia to shine? Made with a sweet and spicy rub, this pan-seared tilapia recipe delivers flaky, tender, perfectly seasoned tilapia in less than 15 minutes.

  • Tilapia Fillets: Use 4 to 6-ounce tilapia fillets. I recommend wild-caught, blue tilapia fillets, but farm-raised tilapia will work for this recipe as well.
  • Spice Rub: To season the tilapia, use a mixture of brown sugar, chili powder, kosher salt, garlic powder, and lime zest. It is sweet, spicy, bright and perfect for this mild white fish.
  • Oil: Extra virgin olive oil is my go-to for pan-frying.
  • To Finish: Use the juice of a lime (that you zested for the Limes: The zest and juice of fresh lime help to make the flavors pop in this easy tilapia recipe.

How to Defrost Tilapia

Best Way to Defrost Tilapia

The most effective way to defrost frozen tilapia is to place the fillets in a large bowl and thaw slowly in the refrigerator overnight. For quicker thawing, place the frozen fillets in their vacuum sealed into a bowl of cold water, changing out the water every 30 minutes, to keep the water cold. Tilapia is so thin, the fillets should defrost in about 20 minutes.

How to Pan Fry Tilapia

The following tips are provided to help you achieve perfect results. You will find the ingredient quantities and detailed instructions in the recipe card at the bottom of this post.

  1. Prepare Seasoning. In a small bowl, combine the chili powder, brown sugar, garlic powder, lime zest, and salt.
  2. Season Tilapia. Pat the defrosted tilapia dry with paper towels. Season both sides of the tilapia with the seasoning blend and use your hands to evenly rub the seasoning mixture onto the fish.
  3. Pan-Sear. Heat oil in a non-stick skillet over medium-high heat. You want relatively high heat so that the fish sears in the oil instead of absorbing the oil. Place seasoned fish in a skillet gently and leave it alone for 4 minutes. Keep in mind to NOT overcrowd the pan, if your nonstick skillet is on the smaller side, cook the tilapia in batches (as shown pictured below.)
  4. Flip and Finish Cooking. Gently flip the fish fillets and finish cooking on the remaining side. It will take anywhere from 2-4 minutes depending on the thickness of the tilapia fillet. When the fish flakes easily with a fork and the center is translucent, the fish is fully cooked.
  5. Finish with Lime Juice. Remove the tilapia from the heat and squeeze the fresh lime juice over the fish.

Recipe Modifications

  • Top with a Fresh Salsa: Rather than pairing this boldy spiced fish with tartar sauce, a fresh fruit salsa is a better pairing. I have included a recipe for a tart granny smith salsa made with apples, onions, cilantro, and lime juice in the recipe card, which makes for an incredible finish for tilapia. It is bright, fresh, and tart, and adds texture to the overall dish. You can easily omit the salsa or serve it with Mango Pineapple Salsa instead.
  • Vary the Seasoning: Replace the chili lime seasoning for jerk seasoning or Cajun seasoning.
  • Swap out the Fish: Feel free to use mahi mahi, cod, haddock, or any white fish in place of the tilapia. Keep in mind that the cooking times may vary slightly.

Serving Suggestions

To round out your easy fish dinner, serve the pan-fried tilapia with pineapple rice or Instant Pot Cilantro Lime Rice. Or if you aren't topping your tilapia with salsa, it pairs beautifully with a side of Cheesy Grits or Roasted Fingerling Potatoes.

Chili Lime Pan-Seared Tilapia

Tilapia is seasoned with a sweet and spicy rub and finished and quickly pan-fried to create a simple, flavorful fish dinner.

Ingredients 

For the Tilapia

  • 4 (6 ounce) frozen Tilapia Fish Fillets, defrosted
  • 1 tablespoon chili powder
  • 1 tablespoon brown sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • 1 small lime, zest and juice
  • 1 tablespoon extra virgin olive oil

For the Apple Salsa (Optional)

  • 1 large granny smith apple, diced
  • 1 tablespoon minced red onion
  • 1 tablespoon minced cilantro
  • ¼ teaspoon kosher salt
  • 1 small lime, juice and zested

Instructions 

Pan Seared Tilapia

  • Defrost 4 (6 ounce) frozen Tilapia Fish Fillets in a bowl of cold water for 20-30 minutes or overnight in the refrigerator.
  • In a small bowl, combine the 1 tablespoon chili powder, 1 tablespoon brown sugar, 1 teaspoon kosher salt, ½ teaspoon garlic powder, and the zest of 1 small lime.
  • Remove the tilapia fillets from the package and pat dry with a paper towel. Sprinkle the spice mixture evenly over each fish filet on each side, and rub it into the fish to coat.
  • Heat 1 tablespoon extra virgin olive oil in a nonstick skillet over medium-high heat. Once the oil is glistening, add the seasoned tilapia in an even layer, being sure to not crowd the pan. Cook for 4 minutes undisturbed and then carefully flip the fish over.
  • Squeeze the juice 1 small lime (that you zested) over the fish while in the pan, and finish cooking the fish for 2-3 minutes or cooked through and opaque and flaky.
  • Remove the tilapia from the skillet and let rest for 5 minutes. Serve with or without the salsa.

Apple Salsa

  • Mix together 1 large granny smith apple (diced), 1 tablespoon minced red onion, and ¼ teaspoon kosher salt with the zest and juice of 1 small lime. Season with salt and mix well. Serve with the fish as desired. 1 tablespoon minced cilantro

Notes

Note on Pan-Frying Tilapia: Do not overcrowd your skillet, as this will cause your tilapia to steam and not brown. Instead, you can use half the oil and cook in 2 batches if needed.
Oil: Use olive oil to pan-fry tilapia, or another high-smoking oil such as coconut, peanut, or vegetable oil.
Apple Salsa: This is completely optional, but if using it, using a granny smith apple is key to this tart and bright salsa. I would not use a sweeter apple. If you don't have granny smith apples, pineapple would be a great substitution.
Leftovers: Fish is best served fresh, but leftovers will keep for 2 days in the refrigerator.
