Making an Italian dressing at home is incredibly simple, but to make one that never falls flat, pay attention to the following tips.
- Use fresh lemon juice. Fresh lemon gives the dressing its bright, zesty finish.
- Shake or whisk thoroughly. Oil and vinegar naturally separate, so whisk well or shake in a jar until the dressing looks slightly creamy.
- Don't skip the honey. It won't make the dressing sweet. Instead it balances the acidity and rounds out the flavor beautifully.
- Use good olive oil. Since olive oil is the base, the flavor matters here. Extra virgin olive oil gives the dressing the best rich, peppery flavor.
- Let it sit for 10 minutes at room temperature after chilling. The olive oil may solidify in the refrigerator. It's completely normal for the oil to solidify in the refrigerator. Letting it sit at room temp (or running the jar under hot water) helps to loosen things up.

- Whisk until fully combined, or secure the lid on a jar and shake vigorously for about 30 seconds. The dressing should look slightly cloudy and well blended.

Ingredients

- 2 teaspoons honey
- 1 teaspoon kosher salt, or sea salt
- 1 teaspoon garlic powder
- 2 teaspoons Italian seasoning
- ⅛ teaspoon ground black pepper, + more to taste
- ½ cup extra virgin olive oil
Instructions
- In a small bowl, glass measuring cup, or jar that can be fitted with a lid, add all ingredients. Vigorously whisk or shake to combine and emulsify the dressing.
- Use immediately or store in an airtight container (like a glass jar fitted with a lid) in the refrigerator for up to 2 weeks. Shake well before use.

What if I don't have a lemon...is that a must?
Hi Kate! The lemon adds quite a bit of flavor. But in a pinch, you can omit it 🙂
this recipe is wonderful. I appreciate it uses dried spices instead of fresh everything. i had to substitute some things bc we didnt have them, like red wine vinegar, and instead of italian i used oregano, basil, and thyme. it was so good. thank you
