When it comes to busy nights, I am all about easy family-approved dinners. And just like you, I don't want to sacrifice quality or taste. Nor do I want to eat the same meal over and over again.

So whenever I have leftover cooked chicken, whether it be from a store-bought or homemade rotisserie chicken, a whole chicken cooked in the Instant Pot, Instant Pot shredded chicken breasts, or oven baked split chicken breasts, these are the easy recipes I turned to! They help me get a shortcut chicken dinner on the table that is not only delicious, but something I feel proud to serve my family.

This is one of my most popular recipes using leftover rotisserie chicken, actually one of my most popular recipes PERIOD. Chicken, rice, and a creamy cheddar sauce bake up to create one amazing comfort-food recipe.

This creamy pasta dinner is made with tender pasta and leftover chicken coated in a creamy, parmesan sauce. It was a favorite of mine growing up and is a favorite of my kids now.
