    Gluten-Free Meals with Beef

    Ground beef is a busy weeknight's dream come true when it comes to a quick meal.  Ground beef cooks up in a short amount of time and can become the base of so many easy meals.

    One of my favorite things to do with this recipe for Sloppy Joes and Taco Meat is to serve it up in lettuce wraps, baked sweet potatoes or baked potatoes for a perfect gluten-free meal. And when I bake the potatoes in my Instant Pot, my dinner is still done start to finish in 30 minutes.

    Note: If you forget to thaw out your hamburger meat (I am guilty of this many times!!), check out my method for perfectly cooking frozen meat. 

    Homemade Sloppy Joes

    This recipe for Homemade Sloppy Joes is sweet, savory, with a hint of spice from the fresh jalapeno, creating the perfect balance of savory flavors. These are SO much better than any Sloppy Joe made with canned sauce.

    Chicken breast is so lean it cooks up in a matter of minutes. But also leftover rotisserie chicken is a quick 30-minute meal go-to--and when you start with a homemade rotisserie chicken, you can assure that your meal is gluten-free as well.
