Pita pizzas are endlessly customizable and insanely easy to make. That said, regardless the toppings you opt to use, keep the following tips in mind for the best results.
- Go light on sauce. A thin layer lets the toppings shine and prevents the pita bread from becoming soggy.
- Blot toppings dry. If adding toppings with high moisture content, like olives, tomatoes, sautéed veggies, or canned pineapple, pat them dry with a paper towel to remove excess moisture. This helps ensure the cheese melts evenly and prevents a soggy crust.
- Grate the cheese yourself. Grated cheese is coated in anti-caking agents which prevent a smooth melt. Grating it yourself (or using thin slices of cheese) ensures a smooth, even melt.
How To Make Pita Bread Pizza
Start with a pita bread (or Naan bread) as the base then build your pizza with sauce, toppings, cheese, and spices of choice. The options are endless. Let me share with you a few of my favorite variations.
Classic Pita Bread Pizza
Spread pita with a thin layer of pizza sauce. Sprinkle with a layer of shredded mozzarella cheese. Add classic pizza toppings like pepperoni, Italian sausage, olives, veggies, mushrooms, etc. I also like to sprinkle with garlic powder, Italian seasoning, and crushed red pepper flakes before baking (or air-frying).

BBQ Pita Pizza
Spread a thin layer of your favorite BBQ sauce over the pita. Add leftover Instant Pot pulled pork, Slow Cooker pulled pork, or Instant Pot BBQ chicken, or diced pork/chicken to the pita and top with shredded cheddar and bake or air-fry as directed.

Greek Pita Pizza
Spread a thin layer of pizza sauce, marinara, or even hummus over the pita bread. Top with sliced grape tomatoes, roasted peppers, crumbled feta cheese, and sliced Kalamata and Spanish olives. Sprinkle with dried oregano or Greek seasoning and bake or air-fry as directed.

A Few More Flavor Variations
- Taco: Put a fast spin on my taco pizza recipe by using pita bread in place of pizza dough. Spread a thin layer of refried beans over the pita bread, top with thick salsa, taco meat, and grated sharp cheddar. Bake as directed. Serve with sour cream, diced tomatoes, or diced avocado as desired.
- Buffalo Chicken: A spin on my popular buffalo chicken pizza. Toss leftover rotisserie chicken with buffalo sauce. Spread the chicken on pita bread and top with cheddar cheese. Bake as directed and drizzle with ranch dressing or bleu cheese dressing before serving.
- Margherita: Top with pizza sauce and fresh mozzarella slices. Bake as directed. Before serving, drizzle with olive oil and top with salt, pepper, and fresh basil.
- Dessert: Spread peanut butter or Nutella over pita bread. Top with mini marshmallows and chocolate chips and bake until the marshmallows are toasted and the chocolate begins to melt.
- Note on Air-Frying Pita Bread Pizzas: Shredded cheese can blow off the pita bread if not weighed down with toppings. If you are going for plain cheese, I would skip the shredded cheese, and use sliced cheese instead.

Pita Pizzas

Ingredients
- 6 pita breads
- 1 cup pizza sauce, or sauce of choice
- 2 cups shredded cheese, mozzarella, cheddar, etc.
- toppings of choice
Instructions
- Preheat oven to 400℉ (200℃).
- Spread a thin layer (about 1-2 tablespoons) of sauce on each pita bread. Top with an even layer of shredded cheese to cover sauce. Add toppings of choice, like pepperoni, olives, mushrooms, sausage, taco meat, etc.
- Place the assembled pita bread pizzas on a baking sheet. Bake for 10 minutes, or until the cheese has melted.
- Remove the pita pizzas from the oven and let them rest for 2-3 minutes before slicing and enjoying.

I am teaching a children's garden program this summer at our historical society. Each year we make pizza at the end of the program. This year I am trying to use recipes that are easy for elementary children to make at home themselves. so the usual home made dough is out of the question, and with more covid safety precautions, I was thinking they each need to make their own using fresh chopped ingredients and herbs from the garden.
This should be perfect! Except I don't have a toaster oven. We will have to use the old 1920's gas oven in the house, but we can get two cookies sheets in at once so it should be fairly efficient, and kids may have toaster ovens at home which would be safer!
