These Easy Meals Will Save You on Busy Nights

Let's be real, there are nights when we are simply too tired, too busy, or just too overwhelmed to cook. Whether it's from lack of time, energy, motivation, or health challenges, we all need easy dinner ideas that don't require much thought or effort.

Breakfast for Dinner 

Brinner, or breakfast for dinner, is a family favorite in our house! It's quick, cozy, and always a crowd-pleaser. Try these Combos:

Taco night is always a win. Whether you're feeding picky eaters or cleaning out the fridge, tacos are endlessly flexible. Try one of these quick and easy recipes:

Bonus Meal

Make extra taco filling and use it the next night to make burritos, taco pizza, or a taco salad, turning one easy meal into two!

Pasta the Easy Way

You can't beat pasta when you are short on time. It can be dressed up in a million different ways, is hearty, cozy, and loved by all. Try out one of my favorite easy pasta dinners:

  • Pesto Pasta: Toss cooked noodles with pesto. Talk about easy, yet sophisticated flavor.
  • Buttered Noodles: Toss cooked noodles with butter, salt, garlic powder, and parmesan. If you have a fresh lemon, try lemon garlic pasta -- it feels fancy, but is so easy to make!
  • Simply Sauced: Toss cooked noodles with jarred or homemade spaghetti sauce.
  • Light Fettuccine: One pot, no draining required, and ready in 15 minutes!

Pair with a side salad or steamed veggies for a full meal.

Stir-Fry in 15 Minutes

Baked Potato Bar

I often plan for this meal on weeks that I know will be crazy busy. Start with Instant Pot Baked Potatoes, Air Fryer Baked Potatoes or Instant Pot Sweet Potatoes, and let everyone build their own dinner! Add toppings like:

Sheet Pan Meals

You have to love it when you can toss a bunch of ingredients on a sheet pan, place them into the oven, and FORGET about it! Favorites include:

These meals take a little longer to bake, but they're incredibly hands-off.

Put Refried Beans to Work

While I typically keep homemade refried beans in my freezer, you will always find canned refried beans in my pantry as well. They are budget-friendly, protein-packed, and can make be used to make a really quick dinner. Use them to make:

  • Bean Burritos: Keep is simple and just use refried beans, taco seasoning, and cheese OR if you have leftover rice, add to the mix to bulk up the burritos a bit more.
  • Bean Tostadas: Think Mexican Pizza but super quick and easy!!

Pizza Night the Easy Way

  1. I like that these really are simple and you didn't fall prey to the temptation of putting fancier twists. These really are simple! As a working from home mom, I have really been in this mode recently. I'm trying to break out of it and make some plans and these give me some ideas for some easy meals I can add.
