Let's be real, there are nights when we are simply too tired, too busy, or just too overwhelmed to cook. Whether it's from lack of time, energy, motivation, or health challenges, we all need easy dinner ideas that don't require much thought or effort.
Let these quick and easy meals be your solution.
We are talking about recipes that are:
- My EASIEST of easy recipes.
- Made with pantry staples and minimal prep.
- Uncomplicated, yet satisfying.
- Wholesome and family-approved.
So put down the takeout menu, these simple recipes will get a meal on the table effortlessly and leave money left in your pocket! Even when you are simply exhausted.

Breakfast for Dinner
Brinner, or breakfast for dinner, is a family favorite in our house! It's quick, cozy, and always a crowd-pleaser. Try these Combos:
- Scrambled Eggs: Scramble up some eggs, toast up whole-grain bread, and serve with a side of yogurt and fresh fruit. Perfectly balanced and very little effort.
- Waffles or Pancakes: Whip up blender banana pancakes or whole wheat pancakes in minutes with pantry staples, or pull a few waffles (homemade or store-bought) from the freezer. Top with nut butter and chia jam or fruit, and call it a simple win.

Tacos
Taco night is always a win. Whether you're feeding picky eaters or cleaning out the fridge, tacos are endlessly flexible. Try one of these quick and easy recipes:
- Black Bean Tacos: Just 15 minutes using a few inexpensive pantry staples. This is one of my top go-to recipes on nights I don't feel like cooking.
- Shredded Chicken Tacos: Let a rotisserie chicken do the heavy lifting for you!
- Classic Beef Tacos: Easy and always a favorite.
- Instant Pot Chicken Tacos: Dump and cook. Even works with frozen chicken!
Bonus Meal
Make extra taco filling and use it the next night to make burritos, taco pizza, or a taco salad, turning one easy meal into two!

Sandwiches
PB&J is great in a pinch (and sometimes it just hits the spot), but you can elevate your sandwich game with almost no effort. Try out one of our favorites:
- Pizza Grilled Cheese: Clearly a win with the kids!
- Veggie Wrap: Think cold veggie pizza in a roll-up form. So good!
- Chickpea Avocado Sandwich: So simple, yet so flavorful.
- Turkey Club Wrap: It's for more than just lunch!
- Tuna Salad: Not your average tuna salad, the avocado makes it crave-worthy.
Serve with fresh fruit and veggies with ranch, and you have an easy, balanced dinner made in minutes.

Pasta the Easy Way
You can't beat pasta when you are short on time. It can be dressed up in a million different ways, is hearty, cozy, and loved by all. Try out one of my favorite easy pasta dinners:
- Pesto Pasta: Toss cooked noodles with pesto. Talk about easy, yet sophisticated flavor.
- Buttered Noodles: Toss cooked noodles with butter, salt, garlic powder, and parmesan. If you have a fresh lemon, try lemon garlic pasta -- it feels fancy, but is so easy to make!
- Simply Sauced: Toss cooked noodles with jarred or homemade spaghetti sauce.
- Light Fettuccine: One pot, no draining required, and ready in 15 minutes!
Pair with a side salad or steamed veggies for a full meal.

Stir-Fry in 15 Minutes
Keep these quick stir-fry recipes in your back pocket for nights when you need dinner in 15 minutes or less. Need more inspiration? Check out all my quick and easy stir-fry recipes.
- Chicken and Asparagus Stir-Fry: Use whatever veggies you have on hand.
- Chicken and Bok Choy Stir Fry: Looks and tastes fancy, but one of the easiest dinner recipes!
- Shrimp Stir Fry: 12 minutes until dinner is on the table!
- Easy Fried Rice: Perfect for using up leftover rice and veggies!

Baked Potato Bar
I often plan for this meal on weeks that I know will be crazy busy. Start with Instant Pot Baked Potatoes, Air Fryer Baked Potatoes or Instant Pot Sweet Potatoes, and let everyone build their own dinner! Add toppings like:
- Steamed Broccoli and Cheese
- Leftover Chili (Chicken Chili, Crockpot Chili, or Instant Pot Chili)
- Pulled Pork (Instant Pot Pulled Pork or Crockpot Pulled Pork)
- Taco Meat
- Leftover Sloppy Joes and Cheese
Serve with a side salad or fruit for an easy, cheap, and filling meal. Plus it is a great way to make the most of leftovers.

Sheet Pan Meals
You have to love it when you can toss a bunch of ingredients on a sheet pan, place them into the oven, and FORGET about it! Favorites include:
- Chicken Thigh Sheet Pan Dinner: Juicy, crispy chicken with tender potatoes and veggies of choice.
- Bratwurst & Veggies: Oktoberfest flavors on the fly.
- Baked Italian Sausage with Peppers: Serve on buns or over pasta.
- Sheet Pan Gnocchi: No-boiling required! Toss with olive oil, seasonings, and veggies, and call it dinner.
These meals take a little longer to bake, but they're incredibly hands-off.

Put Refried Beans to Work
While I typically keep homemade refried beans in my freezer, you will always find canned refried beans in my pantry as well. They are budget-friendly, protein-packed, and can make be used to make a really quick dinner. Use them to make:
- Bean Burritos: Keep is simple and just use refried beans, taco seasoning, and cheese OR if you have leftover rice, add to the mix to bulk up the burritos a bit more.
- Bean Tostadas: Think Mexican Pizza but super quick and easy!!

Pizza Night the Easy Way
When the time or energy is lacking to make homemade pizza dough, keep it easy (and delicious) with one of my easy variations on pizza:
- Pita Pizzas: Keep it classic or top with leftovers (like pulled pork or buffalo chicken)
- English Muffin Pizzas: A few tips, elevate this childhood classic.
- Air Fryer Bagel Pizzas: Let the kids make these for you!
- Air Fryer French Bread Pizza: So much better than frozen.
These recipes take minutes to prepare and are great for kids to help out with!

It's so nice to know I'm not alone when it comes to being too tired to cook! It helps to know what others are doing when in this same predicament! We all have those days, but now with these ideas we don't have to opt for unhealthy choices.

Such a great idea to post this just before school starts. I'm a teacher and I have to go back in two weeks. Those first few weeks are sooo busy, I get home from work and just melt with exhaustion! Even if you're not a teacher, if you have kids starting back, it's the same thing…organizing sports, back to school meetings, volunteering! Phew! I'm tired just thinking about it! Thanks for posting!

So many great ideas Kristen, these are timesavers for sure. Love the panzanella salad idea! Yum. We do breakfast for dinner a lot around here, especially on nights the kids have sports games or practices. Eggs have a ton of protein and thankfully the kids love brinner!
